Delicious , Low Fat, Whole Wheat Brownies Made With Black Beans. Added Fiber Without the Taste.
Why should I use black beans in my brownies?? Because black beans are high in fiber. Also using applesauce instead of oil will save you a TON of calories. Apple cider vinegar is great for digestion (this also will help stop gas created from fiber). Swapping whole grain for refined grain flower will add nutrients and the dark chocolate will add yumminess and antioxidants. Using almond milk or egg replacer will also reduce the cholesterol for those of you who are looking to lower it.
Dark Chocolate Black Bean Brownies
Ingredients
1 cup brown sugar, packed
1 cup unsweetened applesauce
1 tbls. Ener-G egg replacer mixed with 1/4 cup water or 2 eggs
1/4 cup + 2 tbls. Almond or soy milk
1 1/2 tsp. apple cider vinegar
1 1/2 tsp. vanilla extract
1 1/2 cups whole wheat pastry flour (whole wheat white flour)
3/4 cup cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 1/2 cups dark chocolate chips (60% cacao)
1 can black beans, drained and rinsed well
Directions
1. Preheat oven to 375.
2. Whisk together sugar and applesauce until well combined. Whisk or beat in Ener-G Mixture, milk, vanilla , and vinegar.
3. Combine dry ingredients together except for black beans and chocolate chips.
4. Add wet ingredients to the dry in 1/3rds. Combining well between each addition.
5. Puree beans for 15 seconds in a food processor, blender, food chopper or with a potato masher (should be no large chunks of beans).
6. Stir in beans and chocolate chips until just combined. Pour batter into a sprayed 9 x 13 baking dish.
7. Bake for 16-25 minutes. Until a toothpick comes out clean when inserted into the center.
