I am one to give into my cravings every now and again. My favs- Vanilla cupcakes, carrot cake, nut butters,cookies, cereal, blue moon, red wine, and PANCAKES!! Sometimes though, we have goals, and to reach our goals we have to give up the things we love. That is why I always try to make healthy versions of my favorites. That way I am not missing out on anything and I get to have my cake and eat it too..Literally.
Chocolate Protein Pancakes
These were delicious and I topped them with PB2. If you haven’t tried this yet, it’s only 45 cals for two Tbsp and its great. I saw this recipe in Oxygen mag and I tweaked it just a little. Try it out.
Recipe:
4 egg whites
2 scoops chocolate protein powder(I used Advocare muscle gain)- 1 scoop is fine
1/2c of Old fashioned rolled oats
1 Tbsp Chia seeds
1 Tbsp unsweetened cocoa powder
1/4c unsweetened almond milk
2 Tbsp unsweetened pumpkin
Add Stevia or Splenda to sweeten it up (I used a Tbsp Splenda
This makes two pancakes. Let it soak for 5 min then I just put a little spray oil or coconut oil in a skillet and whip them up. So yummy :)
Icing:
1 Tbsp Chocolate PB2
1 Tbsp Regular PB2
2 Tbsp Greek yogurt
1 Tbsp Milk or water to help stir it up
I sprinkled some cocoa chips on top also. You could just use regular peanut butter or eat it plain if you like.
